Mexican Stuffed Sweet Potatoes

This is a flavorful, protein packed meal prep lunch. It is easy to throw together and is so yummy! So here is what you need to do.

Prepare sweet potatoes by baking or using my Instant Pot Sweet Potato Recipe to make baked sweet potatoes in a fraction of the time! They come out like the picture below in about 25 minutes.

So after you prepare your sweet potatoes you will sauté some diced onion, cook and shred chicken and add the veggies and toppings!

Mexican Stuffed Sweet Potatoes

Servings: 4


4 sweet potatoes

1/2 lb chicken

Salt and pepper to taste

1 yellow onion

1 can black beans

Salsa for drizzling

Guacamole for topping


1. Prepare sweet potatoes by baking or using Instant Pot.

2. Cook and shred chicken. If you need a good recipe try my Simple Meal Prep Chicken. Add salt and pepper to taste.

3. Dice onion. Sauté in a pan on medium heat until edges are caramel in color and onion has softened.

4. Slice sweet potato and top with chicken, black beans and other toppings.

5. Serve!
