This is a great way to get your craving for buffalo chicken dip filled while still getting in a serving of veggies.
It’s a great meal prep recipe to make for lunch during the week and easy to throw together on a Sunday afternoon.
First you will prepare the zucchini. Wash the zucchini and cut off the ends.
Then slice the zucchini in half long ways
Take a spoon and scoop out some of the middle of the zucchini to make room to fill them up.
They will look like the picture above when done.
Next, mix shredded chicken with salt and pepper to taste. Then mix 1/3 cup hot sauce and 1/3 cup ranch dressing into the chicken.
Place zucchini in a baking dish and fill with chicken mixture.
Top with cheese and bake 25 minutes at 350 degrees.
